Southern Rub Deep Fried Turkey Recipe. A finger lickin’ good recipe! This recipe is for a 15 to 18 pound turkey, if available go for a fresh turkey as they turn out crispier than a frozen one. Not always available, but the ultimate turkey still is a fresh organic one. Nothing beats the taste and quality of an organic farm raised turkey!
Note: When rubbing poultry try to get the mix under the skin as skin blocks the flavors.
- 1/2 cup of dark brown sugar
- 6 tablespoons of dry mustard
- 6 tablespoons of salt
- 2 teaspoons of Gumbo filé powder
- 2 teaspoons of hot paprika
- 1/2 teaspoon of freshly ground black pepper
Mix all ingredients in a mixing bowl. Place the bird on the cutting board and start coating it with rub, don’t forget the inside of the turkey. Put your turkey in a plastic bag and let it rest in the fridge for the night.
